Simple and Delicious


    My mother’s homemade leche flan is a dessert I really loved to eat. It’s a regular treat she makes when business is booming! A little treat to celebrate a good sales increase in a month, and it never fails to bring that celebration to life. The simplicity of it is what makes it so special—it’s not overly complicated, but it’s made with the power of “mom’s home cooking food” which just provides nostalgia and simple happiness.


    The leche flan itself is smooth and creamy, with a rich custard that’s just the right amount of sweet. The caramel on top is perfectly balanced, adding a slight bitterness that complements the sweetness of the custard. My mother uses fresh eggs, condensed milk, and a bit of vanilla extract to create the base, adds a bit of calamansi, she says it's to take away the slimy-ness or lansa of the eggs. She steams it slowly, ensuring the texture is always silky and flawless.  


    What I love most about her leche flan is its versatility. Sometimes, she adds a twist, like a hint of citrus zest or a drizzle of coconut milk, which gives it a unique flavor without taking away from the classic taste. But no matter how she makes it, the result is always comforting and satisfying.  

Why It’s the Best

    There’s something about homemade desserts that store-bought ones can’t match. My mother’s leche flan is a perfect example. It’s not overly fancy, but it’s made with love, and that’s what makes it stand out. Every bite reminds me of simple happiness in life that food can represent and give. Celebrations are made happier when food is there, no matter what it is as long as it’s a treat to you.


    While I’ve tried leche flan from other places, nothing compares to the one my mother makes. It’s the ultimate comfort food, and I’m always grateful to have a taste of her homemade version. It’s simple, delicious, and a true comfort food.
