 The Italians are Offended: Filipino Carbonara

The Filipino Carbonara is the Filipinos creamier, sweeter take on the classic Italian Carbonara. Most Italians would probably disagree on the authenticity of the Filipino version of Carbonara, but for me it’s one of my favorite dishes. Here are the reasons why: 

First, I love anything with dairy in it. I thank God every day for not making me lactose intolerant, because milk makes everything so delicious. Actually, Italian Carbonara has only three ingredients: eggs, cured pork and hard cheese. Notice that there’s no cream in it? because we Filipinos later added the cream to our version to make it sweet and runny. Adjusting the taste to our liking but offending our Italian friends. I definitely understand why In Hindu cows are considered sacred. Life is nothing without dairy and I’ll die on that hill. Second, I love anything pasta. I’m very sensitive to the texture of food, but I’m obsessed with the texture of pasta. Any type of pasta I love, elbow, bow tie, fettuccine, angel hair. I also consume a lot of pasta related content online, although I know I don’t have the skills to make a decent pasta dish. I also aspire to have one of those fancy pasta makers. I saw a video on one of the Tiktok I’ve watched, it just looks so fun and convenient. Third, my mom makes the best Carbonara in the world. I may be biased because she’s my mom but it's so good I could literally eat it every day. My mom makes her signature Carbonara on every family occasion, best believed I would devour it every single time. She also makes amazing Spaghetti and Pesto. it could be said that her forte is towards pasta dishes. It could be reflected in her daughter's undying love for pasta. 

In conclusion, I love anything pasta and dairy, thus combining those two makes such a treat for my taste buds. And my mom cooks the best Carbonara. Not only did she develop such a delicious recipe but she pours her heart on every dish that she cooks for her family.

  1. So true! Italians are offended hahaha but we cant stop the Filipinos in calling a pasta dish with cream as Carbonara hahaha
