Story time guysss, before that let me tell you the history of my favorite food. Sisig is a Filipino dish that has its origins traced back to the 18th century. The term sisig comes from the old Tagalog word sisigan, which means "to make sour". Originally, it was a sour snack made of green papaya or guava, eaten with a dressing of salt, pepper, garlic, and vinegar. Over time, it evolved into a sizzling dish made from chopped pig parts, often served with mayonnaise or pork cracklings.
Nowadays, sisig has become one of our most popular exports, a dish that is often championed abroad by local and foreign chefs alike. It has taken the world by storm, and is bringing Filipino cuisine to the forefront of the global dining scene, with popular chefs like Anthony Bourdain featuring sisig on their food shows. There is even a festival dedicated to the beloved food held in Pampanga, where it all began.
So let’s begin, when I celebrated my 13th birthday, there were a lot of dishes prepared at the table. While I was picking my food, I saw the delicious looking sisig at the table and it caught my eye. When I first chewed the crispy meat and crispy onion together, it felt like the world was healing at that moment because the taste of that food was intergalactic and delicious and I hope everyone who’s reading this can taste the food I experienced. That sisig was my mom's recipe and i do not know how she makes that kind of food, because you can feel the aroma and that green chili and purple onion, ughhh! So yummy. Because of that, Sisig stayed in my mind forever and to this day, i am still craving sisig anytime. Fun fact: While i am doing this, i am eating sisig lol because i am craving for sisig while doin this. SISIG 4 LAYFFFFFFFFF
